The Koup Karoo offers one of South Africa's most authentic culinary gifts: Karoo lamb. This is not simply a product of a specific breed, like the hardy Dorper sheep, but a direct expression of the terroir. As the sheep graze on the aromatic bossies, the essential oils infuse the meat, giving it a distinctive, herbaceous flavour that is sought after by chefs and gourmands nationwide.

The region's culinary customs are built on this principle of place. Sun-dried fruits, savoury biltong and droëwors (dried sausage), wholesome farm breads, and preserves made from quince and figs all speak of a culture of self-sufficiency and a deep connection between the kitchen and the veld.
